Because Laos was ruled by the French from 1893-1954, the country knows its French bread! This breakfast was served in Nong Kiauw, Laos, a remote town north of Luang Prabang.

Laos Style Coconut-Banana French Toast

1 French baguette, cut into small slices
3 eggs
Coconut milk or coconut cream
Sweetened condensed milk
Cinnamon, to taste
Toasted coconut (optional)
1 Banana

Whisk together the eggs, coconut milk and sweetened condensed milk. Add as much cinnamon as desired. Add optional toasted coconut here or wait to sprinkle on top of finished product.

Dip each side of the bread pieces into the mixture, immediately moving to a hot griddle. Flip when one side is finished cooking.

Top with banana slices.

Drizzle with syrup. The restaurant used coconut cream as their syrup.


*The whisked mixture may have to be thinned with a few drops of regular milk in the case of using coconut cream.
